Founded in 2006 by ramen master Taisuke Nakamura, INOSHO built a loyal following across western Tokyo with seven branches and a reputation for bold, umami-forward ramen.

The signature Tonkotsu-Gyokai broth is slow-simmered for two whole days, blending rich and porky tonkotsu with oceanic-umami gyokai made from dried baby sardines, bonito, and mackerel. Now in Salcedo Village, Makati — INOSHO's first international outpost.
